View Full Version : Gluten Free Diet
So about a week ago I realized that I had a lot of symptoms of gluten intolerance and decided to see a doctor about it (knowing that self diagnosis is way dangerous...yes I just said way). Amazingly, I got an appt. at the base clinic in 3 days (which was Thursday). I went in and just told them by symptoms, and they suggested testing for celiac disease. But the test takes 3 weeks :eyeroller: So the doctor said to start the gluten free diet and go back in 3 weeks. Well I'm on day 3 of the gluten free diet and I already feel a LOT better. It's amazing. I don't want to be on a gluten free diet, because gluten is in freaking EVERYTHING. But if this is the start to feeling a lot better, then its so worth it. :woohoo::woohoo:
Gabe was on a gluten free diet for a long time, he sort of still is basically. There is a blood test they can do to see if you have the possibility of having celiacs too, but if your feeling better you probably do have some sort of intolerance even if it isn't celiacs. Gluten free bread is horrible but I have read that if you have a bread machine and make it by hand it tastes a lot better. Gabe loves rice pasta and Donovan doesn't tell the difference. I made corn pasta once and it was OK, we have also tried quinoa ( keen-wa ) it was pretty good as well. The thing I miss most is not being able to bake much. I haven't found a good substitution for wheat flour that tastes good when making baked goods.

how hard is it to switch to a gluten free diet?

Thanks Kira!! I havent tried any of the gluten free pastas yet...kinda nervous lol. But my mom found new Betty Crocker cake, brownie, and chocolate chip cookies that are gluten free. We made the cookies last week. They are a bit grainy, but if you refrigerate them, then they are quite good!
Sarah - so far, not too bad. I miss bread a bit...the hardest part has been making sandwiches for lil M and not eating the crust he leaves behind lol.
Yeah Erin that's my problem as well. It is just too grainy for my liking. We tried pancakes, muffins, and cookies all with different flours and recipes and it still blah. Gabe's problem is his food allergies so I only bake or buy cookies once a month and when I do he gets to cheat. Bad mommy..lol.
